Cucumber Salsa

Mommy's Cucumber Salsa is a big hit ... it's requested often and she has shared her recipe more times than I've gone outside today! (and that's a lot, considering I have my own doggy door) She lets me try it sometimes and I sure do like it. I'm sure she wouldn't mind if I share it with you, so here it is:

Cucumber Salsa

cucumbers (2 large or 3 medium)
bell peppers (1 green, 1 red, 1 orange)
purple onion (1 medium)
tomatoes (2 medium)
jalapeno (1) (remove seeds for less heat)
Taragon or apple cider vinegar
dry Ranch Dressing mix

Dice all vegetables and place in large bowl. In small bowl, whisk together 1/2 to 3/4 cup vinegar and dressing mix until no more lumps. Drizzle over diced vegetables. Fold vegetables to mix well. Refrigerate over night. Serve with tortilla chips. (Mommy likes to use the Tostito Scoops)

OH! Mommy asked me to tell you that this makes a pretty big batch, so you could half it if you want.

Woohoo! Almost dinnertime ... I wonder what they're fixing. Sure does smell good in here!

  1. Maizie has a wonderful site! Aren't our scottish terriers just awesome creatures?!! Will have to try out this salsa. Looks like it might be a big hit in the teacher's lounge, too. :D Happy Easter!

  2. I love Maizie's blog! This is so cute!! That recipe sounds wonderful!

  3. Hi Maizie.

My name is Kero and I'm a West Highland White Terrier, which is from the same sort of family as a Scottish Terrier. Anyway, I'm nearly 5 human years old (my birthday is next month).

Your blog looks good so far. Keep up the good work.

    Licks and sniffs,

  4. Mmmm, mmmmm, mmmmm. We'll be making this this summer. We're TwoSpecialTerriers who LOVE our veggies! And we're about to head to your neck of the woods, where a crisp cucumber salsa sounds terriorific on a hot summer's eve!

    Thanks for sharing,
    Jake and Fergi
